I am in the market for a new 10mm longslide, I have two Glock G40, I want to try something single action.
I have found each of these in stock and have been trying to read all I can on them since you can buy two GLOCKS for what one of these costs.

Best gun of the three?  EAA Witness Hunter.  My Witness guns both are excellent firearms.  I have the standard full-size in 10mm and an Elite Match in 10mm + a 38 super barrel.  The Hunter is built to the same quality standards as the Elite Match, and it is a fine firearm.  I would suggest +10% mag springs.  The frame is pre-drilled/tapped for a non-reciprocating optic.  The only complaint I could lodge on this gun is the trigger up-take is a bit long, and on a new gun will have just a touch of creep.  There is an uptake screw, but the nature of the action means you can't adjust it all out as the trigger requires a bit of travel to reset.  But, this is a very, very small gripe.  On mine after I polished it up and put 500 rounds through it the trigger just feels like a two stage.

Best value?  RIA Ultra Match.  These are very solid 1911 pattern 10mm firearms.  Occasionally there is a hiccup in QC, but RIA has stood behind the guns and made them right in every case reported here.  One nice thing about the RIA Ultra Match is the longer dust cover compared to other 1911 longslides.  Especially since the gun has a rail.  This gives additional space to mount accessories and additional weight to tame recoil on heavy hunting loads.  You don't mention if you are after a standard or high capacity version, but I will mention that in the HC version the Triple K P-16 mags work great and hold 17 rounds...At least mine do.

The Remington is a nice gun, but it has the name premium that I don't really care about.  Comparing apples to apples between the RIA Match Ultra SC and the R1 Hunter on Gunbroker, there is a $200 premium for the Remington, and you lose the longer dust cover.  The Remington is assembled in the US, but won't comment on where the parts are sourced, which tells you they aren't sourced in the US cause if they were they would gladly say so.

These are all my opinions.  I would probably get the Hunter since my Witness guns are more reliable than my 1911's.  That is not to say my 1911's are problem children cause they aren't, just that out of 1K rounds I would expect the 1911 to stumble once or twice, but would not expect that from my Witness.

I don't have the RIA, but do have the Witness hunter and the Remington LS Hunter. both shoot and function perfectly. Build quality is equal as is chamber support. Can't go wrong with either. I like the heft of the Witness and the mag capacity. The Remington is a 1911 so parts are very easy to come by for it. Tough choice. Good Luck! Which ever you choose I promise it won't be your last 10mm!

The Hunter is about the best priced LS 10mm out there and I will never part with mine. I even bought an extra barrel for it just in case...

The catch is I have two sons, so Im trying to buy two of everything, crazy I guess.
Where is the best place to find one of the EAA Hunters.
A search on Gunbroker and grabagun hasn't turned one up.

Just have to keep checking GunBroker for when a shipment comes in.

This.  Witness guns are feast/famine.  They get a couple of big shipments a year and for a few months they will be everywhere.

I have a witness hunter which I love. Just need to do a heavier spring, and it's a great gun. The only Remington LS I had experience with was so rough it wasn't funny. That is not saying they're a bad gun, it was used- and probably by someone who didn't know much about it- I'm just saying I can't give you a solid opinion one way or the other about the Remington.

BEEMER!

I picked up my new Remington R1 10mm Hunter this week and I just got around to giving it a good look over.  I have not shot it yet.

It uses a one piece guide rod and a bushing design.  Easy to take down, but the spring is is much harder than the 45's I have been shooting of late.  The spring is flat wound and stiff.  I am not a good judge of spring weights.

The fit and finish is very good in my opinion, nice VZ grips that are not over  aggressive in my opinion, but I have not shot it.  The chamber support is just like in the video posted by mr revolverguy shown in the Para Hunter.

It ran $994 insured and shipped so with a $10 transfer and a $100 rebate I am out the door for $904.  From what I can see I am pleased, hope it shoots good.

Here is a good review that I read before purchasing.  I find nothing to contradict the author so far.  Mine is black.

If will add aHunter at some point but am real happy with the R1 it has been very reliable. It handles 200 WFN GC and shoots them accurately. I am just huge fan of the 1911. The Glock 40 is a great utility and with the RMR it shoots accurately at longer distances.
