I just picked up grips for my 1911 at Cherokee Hills Grips in Alabama.  The owner (Bob Adkison) is a helluva nice guy, and he's loaded with info/facts about all types of 'exotic hardwoods' from around the globe.  Their website offers a complete rundown of designs, materials, and costs. My grips came in today, so I mounted them on my Kimber 10mm Target II.
