What shocked me is that they don't recommended using their hotter stuff in the Colt Delta Elite?? After seeing that I guess that I can now scratch the Colt off my want list!

Yup, it left my want list too.  After some pics of insanely poor chamber support  in a Delta that Intercooler had posted I immediately felt the same.

The Delta Elite is a great base gun.  If you have specific customizations you want, eg.  I want a Schuemann barrel with an Ed Brown beavertail and thumb safety, and a Guncraft trigger...Well you get the idea.  In this case a Delta Elite is a great choice becuase the frame and slide will definitly be to 1911 spec.  Most custom builders I know want a Springer or Colt base gun.  Many will accept Caspian frames too.  They do this because the know the dimensions will be to spec, which means just fitting parts.

If you don't have specific requirements, then a Dan Wesson of Kimber is a better gun since they have a ramped barrel already and good upgrades to many other parts.

How does Wilson Combat fit into the mix of being or not being to 1911 spec?

I doubt many of them get a lot of requests to perform work on a Wilson as they are already quite custom.

I would not worry about it that much with a gun in that class.  Part of what you are paying for is the name that will stand behind the gun, and that you won't need to do anything to it.  If you have issues or want changes, contact Wilson.  Their gun, their problem if it is not quite to spec.

Thanks.  Any idea how decent the Wilson Combat 10mm chambers are for case support?  Good for full-house loads?

Last I checked they were ramped barrel, full case head support in 9mm, 38 super, 40 S&W and 10mm.  The 45 ACP was the traditional style.

Does it simply not matter so much with a 45 being a lower pressure cartridge, or is it a more of "who knows" kind of thing?

If for no other reason (21K PSI), it's enough.  But, who knows?
