Would you experienced reloaders agree that staying at or near minimum load data for the 10mm is sufficient for everyday carry self defense?

Chuck11976, Welcome to the forum!  :D I would say you will need to be at the upper end of data from Speer and some others.

Why do I say this?  It is because the data is barely over the 40S&W MAX loadings!

If you are interested in particular data for a particular weight bullet, we could suggest better info for you to consider.  The type bullet and the velocity it is driven may exceed the design criteria for performance.   ???

Ballistically, there's probably nothing wrong with that round at the lower end of the power scale.  HOWEVER, you should also take into consideration YOUR scale, the weather/climates you might encounter, as well as other factors.  The primary goal (after which, nothing else really matters), is functionality and reliability.  To be an effective SD round, it MUST function perfectly in every conceivable condition. Therefore, the "middle ground", or higher load is probably better.  For example, right now it's a lot warmer than it's likely to be during winter (many/most loads perform differently, and your likely real-time target will be more heavily dressed, be they 2 legged or 4); and off/single-hand, and injury shooting is almost always a softer grip (possibility of 'limp-wristing' or loss of grip).  Remember, nothing is ever "routine", and Murphy will be your shadow.

I have become fond of the 200gr JHP's from Nosler as well as Hornady. The powders I have are 800x, Longshot, Power Pistol, and WSF.  Of these, Power Pistol is my fave. I use 800x strictly for super hot loads and WSF for plinking. PP and Longshot would be my first choices for self defense. I use both a G20 as well as a G29. Any load suggestions for reasonable, manageable,  SD loads would be appreciated. Thank you.

You will find the G-29 down on the velocity as compared to the G-20's longer barrel by at least 65-80 fps.

For the 200 grain you will want to see 1180 fps to 1200 fps from the G-20 and those same rounds depending on the powder chosen will be around 1120 fps to 1140 fps from the G-29.

The IMR800X being the fastest will be one of the better performers from the shorter barrel.  Power Pistol is also a great performer but is said to yield bright flash in the darker or less available light.

You could read through the Commercial Pull-Down section and study that documentation of what is being sold and adjust accordingly!   8)
