You fellas think I need to move away from the stock spring before I carry the Underwood 9x25 Nosler Bonded?

I think it's a good idea to do that. The 9x25 can slam the slide pretty hard. I got the Wolff 21# assembly to handle it.
How powerful is 10mm? Well, see those craters on the moon?

Well let's take notes;  Did you have any failures to function?  Feed or eject?
I use the Wolff non captive recoil system with the 21 lb springs, no problems from my setup for 10mm/40S&W/357Sig and 9x25
How far did the brass eject?  I find 9x25's not to eject as far as 10mm with the same spring because the impulse is different.  Most dropping out at 4' to 6' where 10mm can be 10' to 12'.

I think you will be fine with your setup!

How can the 9x25 shooting 125 class bullets be any harder on the gun than shooting 180 grain 10mm rounds?

I recently bought a 9x25 barrel for my G29 and UW Ammo but haven't shot it yet.

You'll soon see.

About 200 rounds in so far and no issues. What should I be looking for?

Slide acceleration.

Both deliver about the same momentum, but the 9X25 is delivering a lot more energy at 850 lb-ft than the 180 at 700 lb ft.  And that energy figure is what determines slide acceleration. Faster slide means more stress on the gun.

OTOH, it also means more grins per trigger pull IMHO!  That is why I have 9X25 barrels for both my Glocks.

One thing I noticed was that the cases actually don't eject as far as the 10mm cases, the necked down case is funneling the pressure through the smaller diameter bore, and the casings are dribbling just to the right side about 4'.  The impulse is different because of the lighter smaller bullets.  When they were working on the 224BOZ the had to lighten the slides to get reliable function from both Glocks and 1911 pistols...
