Looking to get bulk pack of something versatile but seems nice to go ahead with some type of hollow point.
Between the cheaper Winchester 180 jhp or 180 golden sabers
Do you guys recommend one over the other?
Would be shooting out of HK USP 10mm, sig 229 and HkMP5 10mm

If just target play use FMJ or the Winchester 180 JHP, if self defense use the Remington Golden Saber.
However you might want to check out other bulk options, like Parabellum Research (PBR) or Georgia Arms both usually good quality for the price point.
