Anyone know the differences between the Witness Hunter and the Witness Match Extreme, except for the $1100 mark up on the ME?

While both are SAO, the Extreme Match gets an upgraded hammer and fire control group.  The frame on the extreme match is either stainless or hard chrome depending on who you ask.  Different Grips and Ambi Safety on the Match.  Aluminum magazine base plates rather than plastic.

Most of the difference is going to be in the time it spends in the Tanfo custom shop getting hand fitting and polish, as well as QC along the way.  Think Dan Wesson 1911 versus a Ed Brown 1911 or Nighthawk 1911.

The extreme has a ceramic based coating of some sort. The 9mm has slide cut outs. It has the extreme trigger, hammer, and sear and sear cage parts. The trigger is extremely nice on mine. They also come with the extreme grips.
