The things that we don't speak of are that 10% Gelatin is made of actual critter parts and has to be kept chilled.  It's not reusable and heavy and after you're done you need to dispose of pounds and pounds of a substance that without refrigeration begins to smell like dead critter parts. 

All the various test substances are a SWAG at replicating a body with a homogeneous substance. Some are just easier (and less fragrant) to work with.

Yep,
It's type-B gelatin, which is obtained by the partial hydrolysis of collagen derived from the skin, white connective tissue and bones of pork. :o

Clear Ballistics is a far more practical medium but it's vital to know the different characteristics when applying the FBI recommended 12" to 18" penetration depths. 

It's also important to appreciate that just because a particular projectile penetrates 12" to 18" in properly prepared and calibrated 10% ordinance gel (the gel simply provides a consistent, homogeneous test media for comparison), doesn't mean it'll penetrate an animal or BG the same.  Bodies are anything but homogeneous...
