I do not know if Colt does this or not, I doubt it.
Any competent Gunsmith who works on 1911's should be able to do it easily.

Reviews are this usually drops right in.
Colt now does the 40-10 conversion and the also do the 38 Super-9mm conversion.
Looks like they are adding government 9mm's in 2015.
I thought about it on my Delta Gold Cup but unless I had a pile of free or very cheap 40 S&W then does not make sense. I can load 10mm up or down and if I pick up 40 S&W brass then I would have to reload it.
Don't reload yet but I am saving my brass.
Plus I like the idea of a 2 caliber gun.
Like dakota says why bother - the versatility of the 10mm being what it is, why have two rounds laying around for one gun - though there are many that do fire 40's through there 10mm - would work in a critical situation - but the confusion of two different rounds, I prefer KISS.

Doubt anyone here only carries a 10. I have multiple caliber weapons.

Yup, pack .380, 9mm, .40, 10mm depending on my clothing. Usually have my LC9s on me.
I like the idea. You shouldn't shoot full house loads in a D-E anyway.
I'd like to maybe get a conversion for my G20.
Have the 40 and 357 Sig conversion for my G 29, no problems at all.
Sent the Delta in to Colt, they review what you want and send you a bill. You pay the bill and then they do the work.
The bad part is that they say it can take up to 18 months. Not a big deal to me as I have the Glock, a Kimber 10 and a RZ 10 also with a factory conversion. Dan Wesson took less than 90 days and the RZ hums with both calibers.
I was going to try to also convert the 1911's to 357 Sig to, but no factory does it.
Not sure the Delta Gold Cup can handle the pressure, but 9X25 would be a cool Barrel to drop into it
I did it. the 10mm mags work better than the 40SW. Get a FTF once in a while, nose into the feed ramp.
BUT my frame is an old POS Auto-Ord.
